In the salivary glands, they secrete enzymes like amylase, which initiates the breakdown of starches in the mouth. Pancreatic enzymatic cells produce a variety of enzymes such as trypsin, chymotrypsin, and lipase, which play a pivotal role in the digestion of proteins, fats, and carbohydrates. Gastric gland cells secrete pepsinogen, which is converted to pepsin in the acidic environment of the stomach to aid in protein digestion.
